Due to its tropical climate, Southeast Asia has a large number of native aromatic plants, most of which are preferred fresh in local cuisines At the Cambodia Cooking School you will learn all about these herbs: origin, flavour and how to use them.
All these herbs feature prominently in at least some of the Cambodian dishes. Basil, coriander leaves and mint are popular as a fragrant decoration.
Throughout South East Asia, pungent fish preparations are essential: fish sauces and the unique Cambodian paste prepared from fresh water fish, prahok. Most Westerners cannot really appreciate the taste of it, so in our cooking class we either don't use it or only very slightly.
In Cambodia spice usage is less dominant than in neighbouring Thailand.
